What is Green Tea?
Green tea is best known for its grassy vegetal notes, greenish liquor colour and green leaves. It is promptly steamed or pan-fired to denature the oxidizing enzymes and to preserve its freshness. Since green tea is un-oxidized, caution must be taken when steeping. Over-steeping the tea will produce a bitter cup as will using fully boiled water. Less than boiling water is ideal when preparing green tea.

Our Jasmine Snow Dragon for example, is produced by delicately wrapping each young leaf along a sliver of bamboo and then scenting it with the intoxicating scent of newly blossomed jasmine flowers.
